Char Grilled Creamed Corn
Every Backyard BBQ Hero needs a solid lineup of sides to contrast all the rich smoky meat, and this Char Grilled Creamed Corn is one you’ll want in your repertoire. If you’ve ever tried my Smoked Jalapeño Creamed Corn, then you’re already familiar with my creamed corn game. This kid-friendly version removes the mild heat and replaces it with some beautiful charring from the grill. You can bring the whole thing together with just 7 easy ingredients right on your grill in just over 30 minutes. Let’s do it!
Ingredients for Creamed Corn
This creamed corn is popping with flavor, but it doesn’t take a lot of ingredients to make. In fact, you just need 7 items: some fresh corn, and common pantry items you likely already have on hand. Here’s what you’ll want available so you can get started:
- 5 ears corn
- 2 Tablespoons butter
- 1 Tablespoon flour
- ½ cup milk
- ½ cup heavy cream
- 4 ounces cream cheese
- Beef Rub (to taste, or salt and pepper)

Can I Use Frozen Corn?
You can absolutely use frozen corn kernels to make this creamed corn. Unfortunately there’s no great way to grill loose corn kernels, so just keep in mind you won’t get the charring texture. If you want or need to use frozen corn, just make sure it’s thawed and drained, and skip to step 4 when you get to the recipe card.
How to Grill Corn
Before you can make Char Grilled Creamed Corn, you’ve got to char grill your corn. Here’s everything you need to do to get your corn ready for creaming:
- Preheat the grill. Before you do anything with your corn, get your grill fired up. You want your grill at a medium-high heat with an overall temperature of around 400 degrees F. I made my corn on my charcoal grill because I love the charring the kernels get. You can also make this on a gas grill or pellet grill. You may not get that awesome charred texture to contrast the creaminess later on, but you’ll still get a delicious side to feed the people you love.
- Prepare the corn. Remove all the husks and silks from the ears of corn, then use a sharp knife to slice the ends off. Slicing the ends is optional, but it makes shelling easier later on.
- Grill the corn. Place your husked corn directly on the grates of your grill, close the lid, and grill the corn for about 10 minutes, turning occasionally. You want the kernels to become tender and to char slightly.
- Shell the corn. Remove your ears of corn to a cutting board to cool for a few minutes (unless you’ve got my heat-resistant Pitmaster Gloves). Using the same sharp knife, stand your ears of corn on end, then cut the kernels off the cob. Discard the cores and leave the kernels on your cutting board or in a bowl, then set aside for the creamed corn.

How to Make Grilled Creamed Corn
Once you’ve got your corn nice and char grilled, it’s time to bring this sweet and savory side together. Follow these simple steps so you and your family can devour this Char Grilled Creamed Corn together:
- Make the base. Preheat a large cast iron skillet over medium heat, then add the butter. Once the butter melts fully, add the corn kernels, then cook for 3-4 minutes. You can do this right on your grill as well, or you can do the sauce portion on your stovetop.
- Make the cream sauce. Sprinkle in the flour, then stir gently with a whisk for about 1 minute. Slowly pour in the milk while stirring continuously, then let everything simmer for 2-3 minutes. Reduce the heat to low, and then add the heavy cream and cream cheese, stirring gently until the cream cheese melts and you have a smooth, creamy sauce. This should take about 3-5 minutes, but your sauce is ready once smooth.
- Season, serve, and enjoy. Season with Beef Rub to taste, then give everything a final stir. Transfer to a serving dish and serve warm alongside some smoked brisket or pulled pork, or some grilled chicken.
Storage and Reheating
This creamed corn is best enjoyed right after you make it. And to be honest, you’re unlikely to have any leftovers once your friends and family get a taste of this indulgent side. In the event you do, place the remaining creamed corn in an airtight container to store in your refrigerator. The creamed corn will remain fresh for 3 to 4 days, as long as the cream looks smooth and doesn’t have a strong odor.
When it comes to reheating creamed corn, I recommend doing it in a small pot or skillet over low-medium heat until warmed through. I do this on my grill, but you can also do it on your stovetop. Just make sure to only warm the creamed corn through to avoid overcooking.
