Smoke-Fried Deviled Eggs – Hey Grill, Hey



Slow-smoked deviled eggs fried in a crispy, golden batter, then topped with a zesty cream filling and dusted with a little of my Sweet Rub, these Smoke-Fried Deviled Eggs help you give the picnic classic a major flavor upgrade.

You may have already planned what you’re taking to the Easter gathering, but plans have changed. These Smoke-Fried Deviled Eggs are the crispy, creamy appetizer set to steal the show. Hard-boiled eggs get a low-and-slow smoke bath for a depth of flavor. Next, the smoky yolks combine with mayo, Zesty Gold BBQ Sauce, Sweet Rub, diced jalapeños, and apple cider vinegar for a creamy, zippy filling. The eggs get fried in my Crispy Chicken Wing Batter before being filled and kissed with a little extra Sweet Rub.

Do I Have to Smoke The Eggs?

You don’t have to smoke the eggs. You don’t have to deep fry them, either, but this dish is about indulgence. However, if you’re not a fan of smoke, or you’re just short on time, you can skip the smoking step. Just use hard-boiled eggs, and try not to think about the kiss of smoke you’ll be missing.

How to Make Smoke-Fried Deviled Eggs

Once you’ve smoked your eggs and gathered the rest of the ingredients, you’re just 5 easy steps away from making these Smoke-Fried Deviled Eggs right in your own backyard:

  1. Prep the eggs. Boil the eggs, smoke them, and cut them in half. Set the 7 best-looking halves aside to fill later. Save 2 more to dice up for the filling.
  2. Make the filling. Combine the mayo, diced pickled jalapeños, Zesty Gold BBQ Sauce, Sweet Rub, apple cider vinegar, egg yolks, and 2 of the diced egg halves, then whisk vigorously.
  3. Fry the eggs. Preheat the cooking oil to around 350 degrees F in a deep cast-iron skillet. Mix the Crispy Chicken Wing Batter with cold water until you have a smooth batter. Dunk the eggs, then fry them for 1 to 2 minutes per side until crispy and golden-brown.
  4. Fill ’em up. Give the fried egg halves a few minutes to rest on a wire rack, then top them with the cream filling and hit them with a little extra Sweet Rub.
  5. Become a Backyard BBQ Hero. Serve your smoke-fried eggs right after filling them, stand back, and watch as the platter quickly empties.

Susie’s Smoke-Fried Deviled Egg Pro Tips

These deviled eggs are pretty straightforward, but I want to make sure you nail them. Here are a couple tips to help you get it right on the first try:

  • Watch the hole. When battering the egg halves, make sure to pour out any excess batter that may have pooled in the hole on the yolk side. If you have too much batter in one spot, it won’t fry evenly. Doing this when dunking your eggs helps ensure a crispy coating all the way around.
  • Make extra. These bad boys are here for a good time, not a long time. Deviled eggs already go quick, and these are DEEP FRIED. I recommend making a double batch. I also recommend getting a couple for yourself before serving, just to be safe. Trust me.

Simple Smoke-Fried Deviled Egg Recipe

  • Prep the eggs. After you have smoked your eggs, you are ready to fill them. Slice the 7 hard smoked eggs in half. Gently scoop the yolks out into a medium mixing bowl. You can eat or discard the two egg whites that look the most beat up. You need the additional yolk in the filling to make the deviled eggs nice and full.

  • Make the yolk filling. Add in the mayonnaise, mustard, vinegar, BBQ rub, and pickled jalapeños to the egg yolks. Whisk vigorously to combine and fluff up the yolks. 

    3 Tablespoons mayonnaise, 2 teaspoons Hey Grill Hey Zesty Gold BBQ Sauce, 1 teaspoon apple cider vinegar, 2 teaspoons Hey Grill Hey Sweet Rub, 1 Tablespoon pickled jalapeños

  • Batter the eggs. Preheat the cooking oil in a large, heavy-bottom pan over medium heat.In a medium-size bowl, whisk together the Crispy Chicken Wing Batter and cold water. Gently dunk each deviled egg in the batter, ensuring even coating. Make sure to drain the hole of excess batter so you have an even coating for frying.

    1 cup Hey Grill Hey Crispy Chicken Wing Batter, ¾ cup cold water

  • Fry the eggs. When the oil reaches a temperature of 350 degrees F, carefully place the battered eggs in to fry. Cook them for 1 to 2 minutes per side, or until crispy and golden brown.

  • Rest. Remove the fried deviled eggs to a wire rack to cool for a few minutes, and so any excess oil drips off.

  • Fill the eggs. Use a spoon to fill each egg white with about 1 Tablespoon of the yolk mixture into the fried eggs just before serving. Sprinkle with a little extra Sweet rub, and enjoy!
