Prime rib isn’t cheap, so if you’re already splurging on one, whip up some of my homemade Prime Rib Rub. It’s savory, herbaceous, and highlights the natural flavor of your beef without stealing the show.
Homemade Prime Rib Rub
Prime rib means it’s likely a special occasion, and you want a rub to make your investment worth it and your memories great. That’s where my homemade Prime Rib comes in. With a salt-and-pepper foundation, this rub combines garlic powder and onion powder with steakhouse-staple herbs like rosemary and thyme for a blend designed to bring the most out of your prime rib. You can make this rub ahead of time or when you’re ready to season. Oh, and it’s perfect no matter how you like to cook your prime rib.
Ingredients for Prime Rib Rub
One of the best parts about this rub is that it sticks to the Hey Grill Hey style of taking simple ingredients and combining them to make something delicious. This rub uses just 7 ingredients, and most of them are things you’ve likely got on hand already. Here’s what you’ll need so you can make it at home:
- 2 Tablespoons Kosher salt
- 2 Tablespoons coarse black pepper
- 2 Tablespoons garlic powder
- 1 Tablespoon onion powder
- 1 Tablespoon smoked paprika
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
How to Make Prime Rib Rub
If you thought the ingredient list was easy, wait until you see how easy it is to make this herby rub. Just follow these 2 simple steps and you’ll be seasoning prime rib like a Backyard BBQ Hero before you know it:
- Mix the rub. Grab yourself a small bowl, then combine the salt, pepper, garlic powder, onion powder, smoked paprika, rosemary, and thyme. Mix everything together using a whisk or fork until you have an even blend. Prime rib typically has a little herb studding so this is a textured blend. If you like a smoother rub, you can use a spice grinder for a finer rub.
- Use immediately or save for later. You can use your rub right away or store it for later. It’s amazing whether you’re making prime rib on the grill, in the smoker, or even in the oven. This rub also stores easily so it’s perfect for making ahead of time. Check out the next section for some tips on the best ways to store your rub.
How Much Rub to Use for Prime Rib
The short answer on how much Prime Rib Rub to use really depends on your preference. This recipe makes about ½ cup of rub, and for an 8 to 10-pound prime rib, I typically recommend using between ¼ and ½ cup. When you’re doing just a dry rub prime rib, you may want to use more seasoning to penetrate the beef and develop a crust. If you’re smoking a garlic butter prime rib, you’ll likely go a little lighter on the rub.
Storage and Shelf Life
This rub stores easily and has a great shelf life, so it’s perfect for making ahead to have on hand when you want prime rib. Simply place any unused rub in an airtight container and store it in a cool dry place, like your spice rack. I love these glass spice jars with lids, but any airtight container you have will work just fine. Your Prime Rib Rub will remain fresh and ready to use for up to 3 months. It will still be safe to use after that, but you may want to make a new batch for the most flavor.

Mix the rub. Combine the salt, pepper, garlic powder, onion powder, smoked paprika, rosemary, and thyme in a small bowl, then mix until you have an even mixture. I recommend using a whisk or fork so you can break up any clumps. You can use a spice grinder if you prefer a finer blend. I like a more textured rub for prime rib, but feel free to make it how you love.
