Up your morning routine breakfast with this delicious twist on Huevos Rancheros! This version takes everything you love about this fried-egg classic and adds a layer of smoky, crispy pulled pork. Everything gets loaded onto a crunchy tostada with refried beans, then topped with fresh pico de gallo, roasted tomatillo salsa, and Cotija cheese for an explosion of flavor and texture. How to Make Pulled Pork Huevos Rancheros

This Pulled Pork Huevos Rancheros recipe couldn’t be easier to make. Follow these simple steps and you’ll be chowing down on breakfast with your crew in less than a half hour:

  1. Warm the beans. The first thing you want to do is get your beans warmed in a small pan over low heat. That way they’ll spread easier.
  2. Cook the eggs. Next up, heat a cast iron skillet over medium-high heat. Melt the butter in the pan, making sure to coat the bottom of the pan evenly. Carefully crack two eggs into the skillet without breaking the yolks. I like to hit mine with a little Beef Rub at this point, but you can also use salt and pepper to taste.
  3. Crisp the pork. Pile the pulled pork on the oppohttps://homefrontking.com/ side of the skillet as the eggs, and top with some of the tomatillo salsa. Allow the eggs and pork to cook for approximately 2 to 2 ½ minutes. You want the egg whites set, but the yolks still runny.
  4. Assemble, serve, and enjoy! While the eggs and pork are cooking, begin assembling your plate. Place the tostadas (or tortilla chips) on the plate and top with the warm refried beans. Carefully transfer the pork on top of the refried beans. Add the fried eggs and finish with the pico de gallo and Cotija cheese, and enjoy!
